Hi Friends today I would be sharing my version of Lauki(bottle gourd) ki sabji in green masala. I hope you enjoy it as much as I do. Lets get right into it 🙂
Ingredient that we need for this are very basic and simple probably available in every Indian kitchen
- Small bottle gourd/approx 300 gm chopped into half inch cubes
- 2 medium size onion sliced
- 1 tomato chopped
- green chillies 3 to 4, you can increase the number of chillies if you want your dish to be spicy
- 1 tsp Jeera(Cumin)
- 1 inch Ginger
- 7 to 8 garlic cloves
- 1/4 cup coriander finely chopped
- salt to taste
- 1 Tbsp oil.
- 1 bay leaf
- pinch of hing (Asafoetida)
Lets Jump right into preparing this dish. first we will have to make our green masala, for this we will add green chillies, cumin seeds, garlic, ginger, coriander in a mixer grinder and make a fine paste out of it.
Once our paste is ready will heat up a pan and add oil into it. Add bay leaf and hing. After adding hing add onions, saute onions till they are translucent, add our green paste and give it a good mix. Add chopped tomato and cook everything on low to medium flame as high flame can burn our masala.
If you see your masala sticking to the bottom of the pan add 1/4th cup of water and let it cook on low to medium heat. once you start to see oil at the surface of the it add chopped Lauki(Bottle gourd), give it a good mix. Add Salt and mix everything.
Keep on low flame for 2 mins and add 1/4 cup water, you can adjust the quantity of water according to your preference. If you like gravy like consistency then increase the water quantity.
Cook for another 2 min and then add lid to the pan so that Lauki cook through. cook till your lauki is completely cook, this should not take more than 10 mins. Once done add chopped coriander, switch off the flame and plate it with some Roti or Chapati
